We replaced the oil and sugar with more apples (or homemade applesauce) and Stevia to make this healthy and delicious version of apple bread for this Fall season. Pureed apples help bulk up the bread and adds moisture so you don’t miss the oil. Using Stevia replaces the sugar and keeps the sweetness in! Nothing says Fall more than a warm slice of this bread with a touch of margarine and a cup of coffee.
Ingredients
3 Apples, peeled and sliced
2 Eggs
1 tbsp Vegetable Oil
1 3/4 cups Flour
24 packets Stevia
¼ cup fat free Half & Half
1 tbsp Lemon juice
1 tsp Baking Soda
1 tsp Vanilla extract
½ tsp Salt
1 tbsp Cinnamon
½ tsp Nutmeg, ground
¼ tsp Ginger, ground
How to Make it!
Preheat your oven to 375 degrees.
Place peeled and sliced apples into a microwave safe dish and cook on high for 10 minutes.
While the apples are cooking, place the remaining ingredients in a large mixing bowl. Remove
the apples from the microwave and break them down using an immersion blender. Add the
apple mixture to the mixing bowl and blend all the the ingredients together creating the bread
batter. Pour the batter into a large loaf pan and bake for 1 hour and 20 minutes.
