Blueberry Yogurt Parfaits – A healthy Dessert!

It doesn’t get any easier than this. Using fresh blueberry’s and a good grade of frozen vanilla yogurt is the key. This is a great dessert to have when you have guests because it’s easy, healthy and looks and tastes totally decadent. You can make it ahead of time and portion it out into a fancy clear glass like a martini glass or as we show here, a mason jar. Take them out of the freezer and place them into the refrigerator as soon as dinner starts. By the time you finish, all you have to do is add some fat-free whip cream along with a couple of fresh blueberry’s as a nice garnish. I guarantee you and your guests will not be disappointed.

4 oz Blueberries
4 packets of Stevia
1 tbsp. lime juice
24 oz frozen vanilla Yogurt
8 low fat Graham crackers

 

 

 

  1. Using a food processor blend the berries, Stevia and lime juice to a syrup consistency.
  2. Let it marinate for 15 to 20 minutes.
  3. Take out the yogurt and let it thaw to a soft-serve consistency.
  4. Layer the yogurt, graham crackers crumbs and the blueberry compote 2x to fill up the glass      or jar.

Kevin’s Tip: Serve it with fat free whip cream and couple of raw blueberries to make it even better without adding any calories.
